Ingredients
  

For the Crust:
  • 24 whole Oreo cookies
  • 5 tablespoons butter melted
For the Cheesecake Batter:
  • 16 ounces cream cheese at room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • Remaining Oreos chopped (from the package)
For the Chocolate Coating:
  • 16 ounces high-quality chocolate milk or semi-sweet

Method
 

Directions:
  1. Preheat your oven to 350°F (175°C). In a food processor, crush the 24 whole Oreo cookies until they resemble fine crumbs. In a mixing bowl, combine the crushed Oreos with 5 tablespoons of melted butter. Mix until the crumbs are evenly coated.
  2. Line your 9-inch square baking pan with parchment paper. Press the Oreo crumb mixture firmly into the bottom of the pan to create an even crust layer. Bake in the preheated oven for 10 minutes, then remove and let cool.
  3. In a large mixing bowl, beat the 16 ounces of cream cheese until smooth. Gradually add in the 1/2 cup of granulated sugar, mixing until fully incorporated. Then, add the 1/4 cup of sour cream, 2 large eggs, 1 teaspoon of vanilla extract, 1 tablespoon of all-purpose flour, and 1/2 teaspoon of salt. Mix until smooth and creamy.
  4. Gently fold in the remaining chopped Oreos into the cheesecake batter, ensuring they are evenly distributed throughout.
  5. Pour the cheesecake batter over the cooled Oreo crust, smoothing the top with a spatula. Return to the oven and bake for an additional 30-35 minutes, or until the center is set but slightly jiggly. Remove from the oven and let it cool for at least one hour at room temperature.
  6. Once cooled, cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
  7. When ready to serve, melt the 16 ounces of high-quality chocolate in a microwave-safe bowl, heating in 30-second intervals until smooth.
  8. Once the cheesecake is set, use a sharp knife to cut it into bite-sized squares. Dip each piece into the melted chocolate, allowing any excess chocolate to drip off. Place the chocolate-covered cheesecake bites on a parchment-lined tray to set.
  9. Once the chocolate has hardened, serve these delightful Oreo Cheesecake Bites at your next gathering, or keep them all to yourself!
