Ingredients
  

For the Paprika Potatoes:
  • 2 pounds small red potatoes halved and rinsed
  • 1/4 cup olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 2 teaspoons smoked paprika
  • 1 cup chicken broth
  • Salt and pepper to taste

Method
 

Instructions
  1. In your large skillet, heat the olive oil over medium heat. Allow it to warm up, which will help the potatoes cook evenly.
  2. Once the oil is hot, add the chopped onion and sauté for about 3-4 minutes until they become translucent. Then, add the minced garlic and sauté for an additional minute until fragrant.
  3. Add the halved red potatoes to the skillet. Stir them well to coat with the onion and garlic mixture.
  4. Sprinkle the smoked paprika over the potatoes, mixing well to ensure that each potato piece is evenly coated with the spice.
  5. Carefully pour in the chicken broth, and season with salt and pepper to taste.
  6. Cover the skillet with a lid and reduce the heat to low. Allow the potatoes to simmer for about 20-25 minutes, or until they are tender when pierced with a fork.
  7. Once the potatoes are cooked through, remove the lid and give them a gentle stir. Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh herbs if desired.

Notes

  • Substitute olive oil with canola oil or avocado oil if needed.
  • Feel free to use shallots or leeks instead of onion for a different flavor.
