- In your large skillet, heat the olive oil over medium heat. Allow it to warm up, which will help the potatoes cook evenly.
- Once the oil is hot, add the chopped onion and sauté for about 3-4 minutes until they become translucent. Then, add the minced garlic and sauté for an additional minute until fragrant.
- Add the halved red potatoes to the skillet. Stir them well to coat with the onion and garlic mixture.
- Sprinkle the smoked paprika over the potatoes, mixing well to ensure that each potato piece is evenly coated with the spice.
- Carefully pour in the chicken broth, and season with salt and pepper to taste.
- Cover the skillet with a lid and reduce the heat to low. Allow the potatoes to simmer for about 20-25 minutes, or until they are tender when pierced with a fork.
- Once the potatoes are cooked through, remove the lid and give them a gentle stir. Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
