Preheat your oven to 425°F (220°C).
Peel and cut the potatoes into cubes or wedges, rinse them in cold water to remove excess starch.
In a large mixing bowl, combine the potato pieces with olive oil, minced garlic, salt, and pepper. Toss well to coat the potatoes evenly.
Spread the seasoned potatoes on a baking sheet in a single layer and bake for about 25-30 minutes, flipping halfway through.
Once done, remove the potatoes from the oven, sprinkle with Parmesan cheese, and return to the oven for an additional 5 minutes.
Remove from the oven, garnish with chopped parsley, and serve warm.
