Ingredients
  

  • 6 large potatoes (Yukon Gold, peeled and cut into cubes or wedges)
  • 4 tablespoons olive oil (for a crispy texture and rich flavor)

  • 5 cloves garlic (minced, fresh garlic brings a robust flavor)
  • 1 cup Parmesan cheese (freshly grated, for that cheesy goodness)
  • ½ cup fresh parsley (chopped, for garnish and a burst of freshness)

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the potatoes into cubes or wedges, rinse them in cold water to remove excess starch.
  3. In a large mixing bowl, combine the potato pieces with olive oil, minced garlic, salt, and pepper. Toss well to coat the potatoes evenly.
  4. Spread the seasoned potatoes on a baking sheet in a single layer and bake for about 25-30 minutes, flipping halfway through.
  5. Once done, remove the potatoes from the oven, sprinkle with Parmesan cheese, and return to the oven for an additional 5 minutes.
  6. Remove from the oven, garnish with chopped parsley, and serve warm.

Notes

  • For extra flavor, marinate the potatoes in olive oil and garlic for 30 minutes before roasting.
  • Use less olive oil or substitute with vegetable broth for a lighter version.
  • Swap Parmesan with other cheeses like Pecorino Romano for a different taste.
  • Watch the roasting time as it may vary with different oven temperatures.
