Ingredients
  

  • 1 15-ounce can small white beans or cannellini beans (drained, reserve liquid)
  • 1 cup baby spinach (packed)
  • ½ cup grated Parmesan cheese (plus additional for garnish)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper
  • Crackers, chips, or vegetables (for serving)

Method
 

  1. Gather all your ingredients. Drain and rinse the beans, and measure out your spinach, Parmesan cheese, lemon juice, and olive oil.
  2. In a food processor, combine the drained white beans and baby spinach. Pulse until the mixture is mostly smooth, but with a bit of texture remaining.
  3. Add the grated Parmesan cheese, freshly squeezed lemon juice, and olive oil to the mixture. Season with salt and pepper to taste. Blend again until creamy and smooth. If too thick, add reserved bean liquid until desired consistency.
  4. Taste your dip and adjust the seasoning if needed, adding more salt, pepper, or lemon juice according to your preference.
  5. Transfer the dip to a serving bowl and sprinkle with additional Parmesan cheese if desired. Serve with an assortment of crackers, chips, or fresh vegetables for dipping.

Notes

  • For a vegan version, substitute the Parmesan cheese with nutritional yeast or a vegan cheese alternative.
  • Add herbs like basil or dill for a fresh twist in flavor.
