  • 1 stick butter (1/2 cup)
  • 1 cup all-purpose flour
  • 1 pinch salt good pinch
  • 4 large eggs
  • 1 cup shredded cheese of your choice (cheddar, Gruyère, or a mix)

Equipment

  • Medium saucepan
  • Wooden spoon or spatula
  • Mixing bowl
  • Piping bag or cookie scoop
  • Baking sheet
  • Parchment paper

Method

Make Pate a Choux Recipe and Cheese Puffs:
  1. Step 1: In a medium saucepan, combine 1 cup of water and 1 stick of butter. Add a pinch of salt and bring to a gentle boil over medium heat. Stir until the butter melts completely.
  2. Step 2: Once the mixture is boiling, remove it from heat and quickly add in 1 cup of all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a cohesive ball and pulls away from the sides of the pan. This usually takes about 1-2 minutes.
  3. Step 3: Let the dough cool for about 5-10 minutes. This step is crucial, as it prevents the eggs from cooking when added.
  4. Step 4: One at a time, add 4 large eggs to the dough, mixing well after each addition. The dough will look a bit separated at first, but keep stirring until it becomes smooth and glossy.
  5. Step 5: Gently fold in 1 cup of shredded cheese of your choice. Cheddar adds a nice sharpness, while Gruyère adds a rich, nutty flavor.
  6. Step 6: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Use a piping bag or a cookie scoop to drop tablespoon-sized portions of dough onto the prepared sheet, leaving space between each puff.
  7. Step 7: Bake the cheese puffs in the preheated oven for 20-25 minutes, or until they are golden brown and puffed up. Avoid opening the oven door during baking to prevent them from collapsing.
  8. Step 8: Once baked, remove the cheese puffs from the oven and let them cool for a few minutes on a wire rack. Serve warm, and enjoy the delightful cheesy goodness!
