For the Pimento Cheese:
  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese softened
  • 1/2 cup diced pimentos
  • to taste garlic powder
  • to taste onion powder
  • to taste salt
  • to taste pepper

Method
 

  1. In a mixing bowl, combine 1 cup of shredded sharp cheddar cheese, 4 oz of cream cheese (softened), 1/2 cup of diced pimentos, and a pinch of garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy. Set aside.
  2. In a large skillet, heat the 2 teaspoons of olive oil over medium-high heat. Allow it to warm up, ensuring that your chicken gets a nice sear.
  3. Season the boneless skinless chicken breasts with salt and pepper. Place them in the skillet and cook for about 6-7 minutes on each side or until they are golden brown and cooked through. Use a meat thermometer to check that the internal temperature has reached 165°F.
  4. Once the chicken is cooked, reduce the heat to low. Spread a generous amount of the prepared pimento cheese over each chicken breast. Cover the skillet and let it cook for an additional 2-3 minutes, allowing the cheese to melt beautifully.
