  • 1 cup sweetened flaked coconut

  • ½ cup brown sugar
  • ½ cup maple syrup
  • ½ cup extra virgin olive oil
  • ½ cup dried fruit (e.g., dried tart cherries, diced apricots, and craisins)

Method
 

  1. Step 1: Preheat your oven to 325°F (165°C) for golden-brown granola.
  2. Step 2: In a large mixing bowl, combine the oatmeal, pistachios, sweetened flaked coconut, slivered almonds, and a dash of salt. Stir until well mixed.
  3. Step 3: In a separate bowl, whisk together the brown sugar, maple syrup, and extra virgin olive oil until smooth.
  4. Step 4: Pour the wet mixture over the dry ingredients in the large bowl and mix thoroughly.
  5. Step 5: Line your baking sheet with parchment paper and spread the granola mixture evenly across it.
  6. Step 6: Bake for about 25-30 minutes, stirring halfway through to ensure even browning.
