Ingredients
  

For the Chicken:
  • 2 lbs skinless chicken breast (4 medium size boneless)
  • 1 cup pizza sauce (divide 6 tablespoons for filling and 8 tablespoons for topping)
  • 1 cup freshly shredded mozzarella cheese (divided)
  • 4 slices smoked provolone cheese (1 slice per chicken breast)
  • 24 slices pepperoni (regular size)
  • 3 tablespoons extra virgin olive oil
  • ¾ cup plain bread crumbs
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons fresh chopped oregano (divided)
  • 2 tablespoons fresh chopped basil (divided)
  • 2 teaspoons onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper
  • 8 pieces bamboo skewers

Method
 

Cooking Steps:
  1. Step 1: Preheat the Oven - Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for your Pizza Chicken.
  2. Step 2: Prepare the Chicken - Take the skinless chicken breasts and slice them horizontally to create a pocket for the filling.
  3. Step 3: Make the Filling - In a mixing bowl, combine 6 tablespoons of pizza sauce, half of the mozzarella cheese, 1 tablespoon each of fresh chopped oregano and basil, onion powder, kosher salt, and black pepper. Mix well until fully combined.
  4. Step 4: Fill the Chicken - Stuff each chicken breast with the filling mixture, then close the flap. Secure each with a bamboo skewer.
  5. Step 5: Bread the Chicken - Mix the plain bread crumbs, grated parmesan, and remaining herbs. Brush each stuffed chicken with olive oil, then roll in the breadcrumb mixture.
  6. Step 6: Bake the Chicken - Place the breaded chicken in a baking dish and bake for 25-30 minutes.
  7. Step 7: Add the Toppings - Remove from the oven, spread 8 tablespoons of pizza sauce, top with remaining mozzarella, pepperoni, and provolone.
  8. Step 8: Final Bake - Return to the oven and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  9. Step 9: Serve and Enjoy! - Let rest, slice, and serve with fresh herbs if desired.
