  • 3 tablespoons cocoa powder (16g)
  • 2 tablespoons whey protein powder (12g)
  • 3 tablespoons allulose (30g)
  • 1 teaspoon vanilla extract

Method
 

  1. Gather all your ingredients and equipment. Ensure that your cottage cheese is at room temperature for easier mixing.
  2. In a mixing bowl, whisk together the cocoa powder, whey protein powder, and allulose. This helps to eliminate any lumps and ensures even distribution of the dry ingredients.
  3. Add the cottage cheese to the bowl with the dry mixture. Using a whisk or electric mixer, blend until the mixture is smooth and creamy. This may take a minute or two, so be patient!
  4. Pour in the vanilla extract and mix again until fully combined. The vanilla adds depth to the chocolate flavor, making your pudding even more delicious.
  5. Taste your pudding to see if it’s sweet enough for your liking. Adjust with more sweetener if necessary.
  6. Transfer your pudding into a storage container and let it chill in the refrigerator for at least 30 minutes. This helps the flavors meld together and gives it a thicker texture. Serve cold and enjoy!
