For the Jello Layers:
  • 4 packages assorted flavored gelatin (3 ounces each)
  • 1.5 ounces unflavored gelatin divided
  • 5-3/4 cups boiling water divided
  • 14 ounces sweetened condensed milk
  • 1/4 cup cold water

Build Rainbow Jello Cubes Step by Step
  1. Start by selecting your favorite flavored gelatin packs. In a mixing bowl, combine one package of flavored gelatin with 1 cup of boiling water. Whisk until the gelatin is completely dissolved. Pour the mixture into the baking dish and spread it evenly. Place it in the refrigerator for about 30 minutes, or until it’s firm to the touch.
  2. While your first layer is setting, prepare the creamy layer. In a separate bowl, sprinkle 1/2 ounce of unflavored gelatin over 1/4 cup of cold water. Allow it to sit for about 5 minutes. Then, heat it gently until it’s dissolved. In another bowl, mix the sweetened condensed milk with 1 cup of boiling water. Once combined, add the dissolved unflavored gelatin mixture and whisk until fully incorporated.
  3. After the first layer of flavored gelatin has set, pour the creamy mixture over it carefully. Return the dish to the refrigerator and allow it to set for another 30 minutes.
  4. Continue this process by alternating between flavored gelatin layers and the creamy layer. Use different flavors for each layer to achieve a rainbow effect. Remember to allow each layer to set before adding the next one.
  5. Once you’ve added all your layers and they are set, let the entire dish chill for at least 2 hours or until fully firm. When ready, use a sharp knife to cut the jello into cubes and serve!

Notes

  • For a lighter version, substitute sweetened condensed milk with a low-fat version or a non-dairy alternative.
  • Consider using fruit juice instead of flavored gelatin for a more natural flavor.
  • For a vegan option, use agar-agar instead of gelatin.
