Ingredients
  

  • 1 cup vanilla ice cream or frozen yogurt
  • 2 1/2 teaspoons unflavored gelatin (1 envelope Knox unflavored gelatin)
  • 1/2 cup boiling water
  • 4 cups Dole Fruit Bowls in Gel (4 oz. each) in a variety of colors and flavors, chilled in refrigerator

Method
 

Preparation
  1. Start by sprinkling the unflavored gelatin over 1/2 cup of boiling water in a mixing bowl. Whisk until the gelatin is completely dissolved.
  2. Once the gelatin is ready, let it cool slightly before starting to layer. Take your chilled Dole Fruit Bowls in Gel and start with the first color.
  3. Spoon a layer of the fruit gel into the bottom of your clear cup or glass.
  4. After adding the first layer of fruit gel, pour a thin layer of the gelatin mixture over it. Allow this layer to set in the refrigerator for about 15 minutes or until firm.
  5. Continue layering the different colors of fruit gel and the gelatin mixture, allowing each layer to set before adding the next.
  6. Once you've reached the top of your cups with layered jello, add a generous scoop of vanilla ice cream or frozen yogurt on top.
  7. Finally, serve your Rainbow Jello Parfait Cups immediately for the best experience.

Notes

  • Allow each layer of jello to set properly to avoid a messy parfait.
  • Cool the jello mixture before layering to prevent melting the ice cream.
  • Leave some space in the cups for ice cream to avoid spills.
