Preparation Steps
- In a mixing bowl, combine 1 cup of peanut butter, 1/4 cup of softened butter, 1 3/4 cups of powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth and thick.
- Scoop out the mixture and roll into egg shapes. Place on a parchment-lined cookie sheet and chill for 30 minutes.
- Melt 16 ounces of chocolate with 2 tablespoons of butter in a double boiler or microwave.
- Dip each peanut butter egg into the melted chocolate and let excess drip off. Place back on parchment.
- Refrigerate for another 30 minutes until chocolate is set.
