Ingredients
  

For the Filling:
  • 1 cup peanut butter Creamy or crunchy, your choice!
  • 1/4 cup butter softened to room temperature
  • 1 3/4 cups powdered sugar for sweetness
  • 1 teaspoon vanilla extract for flavor
For the Coating:
  • 16 ounces chocolate milk or dark chocolate
  • 2 tablespoons butter for melting the chocolate

Method
 

Preparation Steps
  1. In a mixing bowl, combine 1 cup of peanut butter, 1/4 cup of softened butter, 1 3/4 cups of powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth and thick.
  2. Scoop out the mixture and roll into egg shapes. Place on a parchment-lined cookie sheet and chill for 30 minutes.
  3. Melt 16 ounces of chocolate with 2 tablespoons of butter in a double boiler or microwave.
  4. Dip each peanut butter egg into the melted chocolate and let excess drip off. Place back on parchment.
  5. Refrigerate for another 30 minutes until chocolate is set.
