Ingredients
  

For the Salmon:
  • 4 pieces skinless salmon fillets (6 - 7 oz each)
  • 3 tsp olive oil
  • to taste Salt
  • to taste freshly ground black pepper
  • 3 cloves garlic minced (approximately 1 Tbsp)
  • 1/2 tsp cornstarch
  • 1/2 cup heavy cream
  • 1 1/2 Tbsp Dijon mustard (or a little more to taste)
  • 1/2 tsp honey
  • 1/2 cup low-sodium chicken broth
  • 1 Tbsp fresh dill minced

Method
 

Cooking Instructions:
  1. Start by patting the salmon fillets dry with a paper towel. This will help achieve a nice sear on the fish. Season both sides of each fillet generously with salt and freshly ground black pepper.
  2. In a large skillet, heat 3 teaspoons of olive oil over medium-high heat. Once the oil is shimmering, it's time to add the salmon.
  3. Carefully place the salmon fillets in the skillet, skin-side down (if they have skin). Cook for about 4-5 minutes on the first side until golden brown. Flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork. Once done, remove the salmon from the skillet and set it aside on a plate.
  4. In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds, stirring constantly to prevent burning.
  5. In a small bowl, whisk together the cornstarch with a tablespoon of the chicken broth until smooth. Add this mixture to the skillet along with the remaining chicken broth, heavy cream, Dijon mustard, and honey. Stir well to combine all the ingredients.
  6. Allow the sauce to simmer for about 3-4 minutes, stirring occasionally, until it thickens slightly. If you like a stronger mustard flavor, feel free to add a little more Dijon mustard to taste.
  7. Once the sauce has thickened, remove it from the heat and stir in the fresh dill. This will add a lovely freshness to the sauce.
  8. Return the seared salmon fillets to the skillet, gently spooning the creamy sauce over the top. Serve immediately, and enjoy your delicious Salmon with Creamy Garlic Dijon Sauce!

Notes

  • For the best flavor, use fresh garlic instead of garlic powder.
  • Make sure your skillet is hot enough before adding the salmon to achieve that beautiful sear.
