Ingredients
  

For the Shortbread Crust:
  • 1 cup butter (softened)
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 pinch salt
For the Salted Caramel:
  • 1 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 1 cup heavy cream (or 1/2 cup half and half)
  • 1 teaspoon sea salt
  • 2 teaspoons vanilla extract

Method
 

Step-by-Step Instructions:
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, cream together 1 cup of softened butter and 1 cup of granulated sugar until light and fluffy. Add in 2 cups of all-purpose flour and a pinch of salt, mixing until just combined. Press the dough evenly into the bottom of your greased 9x13 inch baking dish. Bake for 20 minutes or until golden brown. Remove from the oven and set aside to cool.
  2. In a medium saucepan over medium heat, combine 1 cup packed brown sugar, 1/2 cup light corn syrup, and 1 cup of heavy cream. Stir until the mixture is well combined. Bring it to a gentle boil, stirring constantly. If you have a candy thermometer, aim for 240°F (soft ball stage).
  3. Once the caramel reaches the right temperature, remove it from heat. Stir in 2 teaspoons of vanilla extract and 1 teaspoon of sea salt. Be careful as the mixture may bubble up slightly.
  4. Pour the caramel over the cooled shortbread crust, spreading it evenly. Allow the bars to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until the caramel is set.
  5. Once the caramel has set, lift the bars out of the dish using the parchment paper. Slice them into squares or rectangles, and sprinkle a little extra sea salt on top for an added touch. Enjoy your delicious Salted Caramel Bars!
