Ingredients
  

  • 1 pound Sausage (such as Jimmy Dean, or any preferred brand)
  • 1 can Rotel diced tomatoes and green chilies (10-ounce, undrained)
  • 8 ounces Cream Cheese (cut into pieces)
  • 1 cup Shredded Cheese (Mexican blend or Colby Jack works wonderfully)

Method
 

  1. In a large skillet over medium heat, add the sausage. Cook it until it’s browned and crumbled, about 5-7 minutes.
  2. Once the sausage is cooked, reduce the heat to low. Add the undrained can of Rotel diced tomatoes and green chilies, along with the cream cheese pieces. Stir gently until the cream cheese is melted and everything is well combined.
  3. Stir in the shredded cheese until melted and creamy. Once everything is well mixed and heated through, transfer the dip to a serving bowl.
  4. Serve it warm with tortilla chips, crackers, or fresh veggies for dipping.

Notes

  • For an extra kick, add diced jalapeños during summer barbecues.
  • Consider pumpkin puree and spices for a festive fall twist.
  • This dip can be made ahead of time and reheated for convenience.
