Ingredients
  

For the Beef and Vegetables:
  • 1 pound flank steak or tenderloin, sliced thin This cut ensures tenderness and flavor.
  • 1 tablespoon flour or gluten-free flour To help the beef get crispy.
  • 2 tablespoons sesame or olive oil For roasting and flavor.
  • 3 cups broccoli florets Nutrient-dense and crunchy.
  • 2 tablespoons pickled ginger patted dry, adds a zesty kick.
  • 2 shallots sliced For a mild onion flavor.
  • 1/2 cup tamari or soy sauce For that umami depth.
  • 3 tablespoons maple syrup or honey For sweetness.
  • 2-3 tablespoons Gochujang (Korean chili paste), the star for spice.
  • 4 cloves garlic chopped, a must-have aromatic.
  • 2 tablespoons ginger juice (from pickled ginger jar), enhances the ginger flavor.
  • 1 tablespoon toasted sesame oil For a nutty finish.
  • 2 tablespoons sesame seeds For garnish and crunch.
  • 3 Persian cucumbers sliced For a fresh and crunchy side.
  • 1/4 cup chopped green onions For garnish.

Method
 

Instructions:
  1. Start by thinly slicing your flank steak or tenderloin against the grain. Season the beef slices with black pepper and flour, tossing to coat evenly.
  2. In the same mixing bowl, add the tamari or soy sauce, maple syrup or honey, Gochujang, ginger juice, and chopped garlic. Whisk everything together until well combined. Taste and adjust the seasoning as needed.
  3. On your sheet pan, arrange the broccoli florets, sliced shallots, and pickled ginger. Drizzle with sesame or olive oil, sprinkle with salt and black pepper, and toss to coat.
  4. Pour the marinade over the beef and let it sit for 10-15 minutes. After marinating, add the beef to the sheet pan with the vegetables. Roast in a preheated oven at 425°F (220°C) for about 20-25 minutes.
  5. Remove the pan from the oven and drizzle with toasted sesame oil. Sprinkle with sesame seeds and chopped green onions. Serve with spicy mayo and sliced Persian cucumbers.
