  • 8 ounces teriyaki sauce (regular or gluten-free)
  • 3 cups roughly chopped napa cabbage
  • 1 ½ cups sliced carrots
  • 1 cup broccoli florets
  • 4 cups cooked rice (any variety)
  • 1 cup sliced radishes
  • 1 cup sliced fresh pineapple
  • 1 tablespoon sesame seeds

Method
 

  1. Begin by cutting the boneless chicken thighs into bite-sized pieces. In a mixing bowl, combine the cornstarch, salt, ground ginger, and garlic powder. Toss the chicken pieces in the mixture until they are well coated.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add the chicken pieces in a single layer and cook for about 5-7 minutes, or until golden brown and cooked through. Stir occasionally to ensure even cooking.
  3. Once the chicken is cooked, pour the teriyaki sauce over the chicken and stir to coat evenly. Allow it to cook for an additional 2-3 minutes, letting the sauce thicken slightly.
  4. In the same skillet, add the chopped napa cabbage, sliced carrots, and broccoli florets. Stir-fry the vegetables for about 5 minutes, or until they are tender but still crisp. You can add a splash of water to create steam if needed.
  5. Divide the cooked rice among serving bowls. Top each bowl with the chicken and vegetable mixture. Garnish with sliced radishes, fresh pineapple, and a sprinkle of sesame seeds.
