Skinny Baked Cream Cheese Taquitos

Ingredients
  

  • 2 cups cooked and shredded chicken (rotisserie works great)
  • 4 ounces less fat cream cheese softened
  • ½ cup plain Greek yogurt
  • ¾ cup salsa
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • 1 cup Colby Jack cheese
  • 1 tablespoon finely chopped green onion
  • 2 tablespoons finely chopped cilantro
  • 8-10 small wheat flour tortillas

Method
 

  1. Preheat your oven to 400°F (200°C). This ensures your taquitos will get that perfect golden brown color.
  2. In a large mixing bowl, combine the cooked and shredded chicken, softened cream cheese, Greek yogurt, salsa, lime juice, chili powder, garlic powder, cumin, salt, Colby Jack cheese, green onion, and cilantro. Mix well until all ingredients are fully incorporated.
  3. Take a small flour tortilla and spoon about 2-3 tablespoons of the chicken filling onto the center. Roll the tortilla tightly around the filling, tucking in the sides as you go. Place the rolled taquito seam-side down on a baking sheet lined with parchment paper. Repeat until all the filling is used.
  4. Lightly spray the tops of the taquitos with cooking spray or brush with a little olive oil for added crispiness. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
  5. Once baked, remove the taquitos from the oven and let them cool for a few minutes. Serve with additional salsa, guacamole, or your favorite dipping sauce!

Notes

  • Feel free to substitute shredded beef, turkey, or black beans for a vegetarian option.
  • Use whole wheat tortillas for an even healthier option.
  • Make ahead by assembling and refrigerating for up to 24 hours before baking.
