In a large mixing bowl, combine the cooked and shredded chicken, softened cream cheese, Greek yogurt, salsa, lime juice, chili powder, garlic powder, cumin, salt, Colby Jack cheese, green onion, and cilantro. Mix well until all ingredients are fully incorporated.
Take a small flour tortilla and spoon about 2-3 tablespoons of the chicken filling onto the center. Roll the tortilla tightly around the filling, tucking in the sides as you go. Place the rolled taquito seam-side down on a baking sheet lined with parchment paper. Repeat until all the filling is used.
Lightly spray the tops of the taquitos with cooking spray or brush with a little olive oil for added crispiness. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
Once baked, remove the taquitos from the oven and let them cool for a few minutes. Serve with additional salsa, guacamole, or your favorite dipping sauce!
