Ingredients
  

For the Quesadillas:
  • 12 oz chicken breast Boneless and skinless
  • 1 oz taco seasoning packet Store-bought or homemade
  • 4.5 oz mild diced green chiles
  • 1/2 cup salsa
  • 1/4 cup mayonnaise
  • 8 medium flour tortillas whole wheat or gluten-free if desired
  • 2 cups sharp cheddar cheese Or Colby Jack, Mexican blend, or Oaxaca
  • to taste shredded lettuce For serving
  • to taste diced green onion For serving
  • to taste sour cream For topping
  • to taste taco sauce or hot sauce For drizzling

Method
 

Instructions:
  1. Step 1: Prepare the Chicken - Place the chicken breast in the slow cooker. Sprinkle the taco seasoning evenly over the chicken.
  2. Step 2: Add the Goodness - Pour in the diced green chiles, salsa, and mayonnaise.
  3. Step 3: Slow Cook - Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Step 4: Shred the Chicken - Once cooked, shred the chicken with forks and mix well.
  5. Step 5: Assemble the Quesadillas - On one half of a tortilla, spoon the chicken mixture and sprinkle with cheese. Fold over.
  6. Step 6: Cook the Quesadillas - Heat a skillet over medium heat and cook until golden brown, about 2-3 minutes per side.
  7. Step 7: Serve and Enjoy! - Slice into wedges and serve with toppings.
