Ingredients
  

  • 1 cup steel cut oats (I recommend Bob's Red Mill)
  • 2 cups water
  • 1 tablespoon pure maple syrup plus more for serving
  • 1/4 teaspoon cinnamon
  • 1/3 cup egg whites
  • 2 cups mixed fresh berries (blueberries, blackberries, raspberries)
  • 1 medium ripe banana sliced
  • 1/4 cup chopped pecans or walnuts

Method
 

  1. In your slow cooker, combine 1 cup of steel cut oats, 2 cups of water, 1 tablespoon of pure maple syrup, and 1/4 teaspoon of cinnamon. Stir well to ensure the oats are evenly mixed with the water and spices.
  2. Next, gently fold in 1/3 cup of egg whites. This will not only add protein to your oats but also create a creamier texture as they cook.
  3. Cover the slow cooker and set it to low heat for 6 to 8 hours. This is perfect for overnight cooking, allowing you to wake up to a ready-to-eat breakfast.
  4. Once the cooking time is up, give the oats a good stir. Serve hot, topped with your choice of mixed fresh berries, sliced bananas, and chopped pecans or walnuts. Drizzle with additional maple syrup for an extra touch of sweetness.
