Ingredients
  

For the Chicken:
  • 3 pieces boneless, skinless chicken breast halves (about 1 1/2 lb), cut into 1" - 1 1/2" pieces
  • 1/2 cup chicken broth
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/3 cup white vinegar
  • 3 tablespoons lemon juice
  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons tomato paste
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 - 1 teaspoon Sriracha hot sauce (optional)
  • 1/3 cup cornstarch
  • 3/4 cup diced fresh pineapple (fresh is best, but canned works too)
  • 1/4 of an onion diced into 1" pieces
  • 1/2 of a green bell pepper diced into 1" pieces

Method
 

Instructions
  1. Step 1: Prepare the Chicken - Begin by cutting your boneless, skinless chicken breasts into chunks of about 1 to 1.5 inches.
  2. Step 2: Make the Sauce - In a medium bowl, whisk together the chicken broth, light brown sugar, granulated sugar, white vinegar, lemon juice, low sodium soy sauce, tomato paste, garlic powder, ground ginger, black pepper, and Sriracha hot sauce (if using).
  3. Step 3: Combine Ingredients in the Slow Cooker - Place the chicken pieces into the slow cooker. Add the diced onion, diced bell pepper, and fresh pineapple. Pour the sauce over the top.
  4. Step 4: Cook - Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  5. Step 5: Thicken the Sauce - Mix the cornstarch with a little water to create a slurry. Stir this into the slow cooker and let it cook on high for an additional 15-30 minutes.
  6. Step 6: Serve and Enjoy - Serve the Slow Cooker Sweet and Sour Chicken over rice or with steamed vegetables.

Notes

  • For a thicker sauce, ensure to mix the cornstarch slurry well before adding.
  • Feel free to substitute chicken with tofu or tempeh for a vegetarian version.
  • This dish can be made ahead of time; prepare ingredients and sauce separately.
