Ingredients
  

  • 4 ounces whipped cream cheese
  • 2 tablespoons thinly sliced green onions
  • 1 tablespoon finely minced fresh dill
  • 10 slices crustless brioche bread
  • 4 ounces thinly sliced smoked salmon (or 5 large slices)
  • Thinly sliced cucumbers
  • 2 pieces thinly sliced radishes
  • Sea salt and pepper to taste

Method
 

  1. In a medium mixing bowl, combine the whipped cream cheese, thinly sliced green onions, and finely minced fresh dill. Mix until well combined and creamy. Season with sea salt and pepper to taste.
  2. Take the crustless brioche bread and lay out five slices on a clean cutting board. Spread a generous layer of the cream cheese mixture on each slice.
  3. Next, add the thinly sliced smoked salmon evenly over the cream cheese on each slice. Be sure to cover the surface well for maximum flavor.
  4. Layer the thinly sliced cucumbers and thinly sliced radishes on top of the salmon. These vegetables add a nice crunch and freshness that balances the richness of the salmon.
  5. Place the remaining five slices of brioche bread on top of the layered ingredients. Press down gently to secure the fillings.
  6. Using a sharp knife, cut each sandwich into quarters or halves, depending on your preference. Arrange them on a serving platter and garnish with additional dill if desired.

Notes

  • These sandwiches can be made a few hours in advance, just refrigerate until serving.
  • For a healthier option, substitute brioche with whole grain or rye bread.
