  • 2 cloves Garlic whole
  • 1/4 teaspoon Crushed red pepper flakes
  • 1/2 cup Grated Vegetarian Parmesan cheese

  • to taste Freshly cracked black pepper

Method
 

Instructions
  1. Step 1: Cook the Spaghetti - Bring a large pot of salted water to a boil. Add 1 pound of spelt spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
  2. Step 2: Prepare the Garlic Oil - In a large skillet, heat 1/3 cup of extra-virgin olive oil over medium heat. Add 2 whole garlic cloves and 1/4 teaspoon of crushed red pepper flakes. Sauté for about 2-3 minutes until the garlic is golden and fragrant.
  3. Step 3: Combine Pasta and Garlic Oil - Add the drained spaghetti directly to the skillet with the garlic oil. Toss to coat the pasta in the oil and distribute the garlic and red pepper flakes evenly.
  4. Step 4: Add Fresh Ingredients - Stir in 1 cup of chopped parsley and the zest of 1 lemon. The heat will wilt the parsley and release its aroma.
  5. Step 5: Finish with Cheese and Seasoning - Add 1/2 cup of grated Vegetarian Parmesan cheese and toss everything together. If the pasta seems dry, add reserved pasta water until the desired consistency is reached. Season with salt and pepper to taste.
