- Step 1: Cook the Spaghetti - Bring a large pot of salted water to a boil. Add 1 pound of spelt spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
- Step 2: Prepare the Garlic Oil - In a large skillet, heat 1/3 cup of extra-virgin olive oil over medium heat. Add 2 whole garlic cloves and 1/4 teaspoon of crushed red pepper flakes. Sauté for about 2-3 minutes until the garlic is golden and fragrant.

- Step 5: Finish with Cheese and Seasoning - Add 1/2 cup of grated Vegetarian Parmesan cheese and toss everything together. If the pasta seems dry, add reserved pasta water until the desired consistency is reached. Season with salt and pepper to taste.
