Ingredients
  

  • 15 ounces pumpkin puree (not pumpkin pie filling)
  • 4 cloves garlic (minced)
  • 1/3 cup cilantro (freshly chopped)
  • 1/4 cup tahini (stir before using)
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tablespoons extra virgin olive oil
  • 1/8 teaspoon allspice
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1/4 teaspoon crushed red pepper flakes
  • kosher salt (to taste)

Method
 

  1. Start by mincing the garlic and chopping the cilantro. This will ensure that the flavors meld beautifully in the food processor.
  2. In your food processor, combine the pumpkin puree, minced garlic, chopped cilantro, tahini, lime juice, olive oil, allspice, cumin, chili powder, crushed red pepper flakes, and a pinch of kosher salt.
  3. Process the mixture until it’s completely smooth. You may need to stop and scrape down the sides a couple of times to ensure everything is evenly blended.
  4. Taste your hummus and adjust the seasoning as needed. You can add more lime juice for acidity or more chili powder for heat, depending on your preference.
  5. Transfer your Spicy Pumpkin Hummus to a serving bowl. Drizzle with a little extra virgin olive oil and garnish with more chopped cilantro if desired. Serve with fresh veggies, pita chips, or spread it on sandwiches for an extra kick!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to five days.
  • Freeze for up to three months; thaw in the refrigerator overnight before serving.
  • Add a splash of olive oil or lime juice to refresh flavors after thawing.
