Ingredients
  

  • 1 large baguette (324g) - Fresh and crusty for the best texture.
  • 1 can artichoke hearts (13.75-ounce) - Drained and chopped for easy mixing.
  • 1 package spinach (10-ounce) - Frozen or fresh, depending on what you prefer.
  • 2 pieces shallots (86g) - Chopped for a mild onion flavor.
  • 1 clove garlic (3g) - Minced for an aromatic kick.
  • ½ cup Greek yogurt Adds creaminess and tang.
  • ½ cup mayonnaise For richness and depth of flavor.
  • ½ cup Parmesan cheese Grated for a nutty, salty finish.
  • ½ cup mozzarella cheese Grated - Melts beautifully for that gooey texture.

Method
 

  1. Preheat your oven to 375°F (190°C) for even baking.
  2. Slice the baguette in half lengthwise and hollow out some of the bread if desired.
  3. Sauté chopped shallots and minced garlic in a skillet with oil until translucent, about 2-3 minutes.
  4. Mix chopped artichoke hearts, spinach, sautéed shallots and garlic, Greek yogurt, mayonnaise, Parmesan, and mozzarella in a bowl until combined.
  5. Spread the filling evenly across the cut sides of the baguette, packing it in nicely.
  6. Place the filled baguette on a baking sheet and bake for 20-25 minutes until golden brown.
  7. Let cool for a few minutes, slice, and serve warm.

Notes

  • For richer flavor, use freshly grated Parmesan cheese.
  • Substitute Greek yogurt with sour cream for a different taste.
  • Add red pepper flakes for some heat.
  • Try crumbled feta cheese for an interesting twist.
