Ingredients
  

For the Pizza:
  • 16 oz pizza dough (homemade or store-bought)
  • 8 oz fresh spinach (divided)
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 3/4 cup milk
  • 1/4 tsp onion powder
  • Salt and freshly ground black pepper, to taste
  • 1 clove garlic (minced)
  • 2 Tbsp extra virgin olive oil (divided)
  • 4 oz provolone cheese (1 cup, chopped or deli slices)
  • 2 oz shredded mozzarella cheese (1/2 cup)
  • 2 oz finely shredded parmesan cheese (slightly packed, 1/2 cup)
  • 6-8 canned artichoke hearts (drained well and quartered, avoid marinated)
  • Red pepper flakes (for serving, optional)

Instructions
  1. Step 1: Prepare the Dough - If you're using homemade dough, make sure it has enough time to rise. If using store-bought, simply follow the package instructions. Preheat your oven to 475°F (245°C) to ensure a crispy crust.
  2. Step 2: Sauté the Spinach - In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add half of the fresh spinach (4 oz) and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.
  3. Step 3: Make the Creamy Sauce - In the same skillet, melt 2 tablespoons of butter over medium heat. Once melted, whisk in 2 tablespoons of all-purpose flour to create a roux. Cook for about a minute until the mixture is golden. Gradually whisk in 3/4 cup of milk, stirring continuously until the sauce thickens. Add minced garlic, onion powder, salt, and pepper to taste.
  4. Step 4: Combine the Cheeses and Artichokes - In a mixing bowl, combine the provolone, mozzarella, and parmesan cheeses. Add the sautéed spinach and quartered artichoke hearts to the cheese mixture, mixing well to combine.
  5. Step 5: Roll Out the Dough - On a floured surface, roll out your pizza dough to your desired thickness. Transfer the rolled dough to a baking sheet or pizza stone.
  6. Step 6: Assemble the Pizza - Spread the creamy spinach mixture evenly over the rolled-out dough. Sprinkle the cheese and artichoke mixture on top, ensuring even coverage.
  7. Step 7: Bake to Perfection - Drizzle the remaining tablespoon of olive oil over the top of the pizza and place it in the preheated oven. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly and slightly browned.
  8. Step 8: Serve and Enjoy - Once baked, remove your Spinach Artichoke Pizza from the oven. Allow it to cool for a couple of minutes before slicing. Serve hot, with a sprinkle of red pepper flakes if desired.

Notes

  • For a crispy crust, bake on a pizza stone if available.
  • If you prefer a spicier pizza, increase the amount of red pepper flakes.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
