- In a mixing bowl, combine the softened butter, finely chopped kimchi, miso paste, and minced chives. Mix until well blended and set aside at room temperature.
- Season your steaks with salt and pepper. Heat a skillet or grill pan over medium-high heat and cook the steaks to your desired doneness, about 4-5 minutes per side for medium-rare.
- In the same skillet, add the sliced mushrooms drizzled with soy sauce and sauté for about 5-7 minutes until golden brown.
- Let the steaks rest for a few minutes, then top each with kimchi butter and serve with sautéed mushrooms on the side.

- Prepare kimchi butter a day in advance and refrigerate.
- Let the butter come to room temperature before use.
