Ingredients
  

For the Chicken:
  • 2 pieces chicken breasts (about 1 pound, cut in half horizontally)
  • 1 cup buttermilk
  • 1 piece egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne powder
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup flour
  • 1/2 cup cornstarch
  • 1 tsp paprika
  • 4 tbsp butter
  • 4 tbsp sweet chili sauce
  • 1 tbsp sriracha or hot sauce
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce (for the mayo mix)
  • 1 tbsp sriracha (for the mayo mix)
  • 4-6 pieces brioche buns

Method
 

Directions:
  1. Step 1: Marinate the Chicken
    In a large mixing bowl, combine the buttermilk, egg, garlic powder, onion powder, cayenne powder, dried parsley, salt, and pepper. Whisk until well combined. Add the chicken breasts, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
  2. Step 2: Prepare the Coating
    In another bowl, mix together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne powder, and salt. This mixture will create a crispy exterior for your chicken.
  3. Step 3: Heat the Oil
    In a large frying pan, melt the butter over medium heat. You can also use a deep fryer if you prefer. The oil should be hot enough that a pinch of flour sizzles when dropped in.
  4. Step 4: Coat the Chicken
    Remove the marinated chicken from the fridge. Allow excess marinade to drip off, then dredge each piece in the flour mixture. Make sure to coat the chicken evenly, pressing lightly to ensure the coating sticks.
  5. Step 5: Fry the Chicken
    Carefully place the coated chicken into the hot oil. Fry for about 5-7 minutes on each side, or until golden brown and cooked through (the internal temperature should reach 165°F). Remove the chicken and place it on a paper towel-lined plate to absorb excess oil.
  6. Step 6: Prepare the Sauce
    In a small bowl, mix together the sweet chili sauce and sriracha. Once the chicken is cooked, drizzle this sauce over the fried chicken, ensuring each piece is well-coated.
  7. Step 7: Make the Spicy Mayo
    In another bowl, combine the mayonnaise, sweet chili sauce, and sriracha. Mix until smooth and creamy.
  8. Step 8: Assemble the Sandwiches
    Lightly toast the brioche buns if desired. Spread a generous amount of the spicy mayo on the bottom half of each bun. Place a piece of the sticky sweet chili chicken on top, followed by any additional toppings you desire, such as lettuce or pickles. Top with the other half of the bun.
