Ingredients

  • 1 tablespoon canola oil
  • 1 lb. ground beef
  • 2 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • to taste salt and pepper
  • 2 cups Mexican cheese
  • 1/4 cup cojita cheese
  • to taste Cilantro, chopped
  • 4 cups French fries

Equipment

  • Skillet
  • Baking tray
  • Spatula
  • Measuring cups and spoons

Method

  1. In a large skillet over medium heat, heat 1 tablespoon of canola oil. Add 1 lb. of ground beef, breaking it apart with your spatula. Cook until the beef is browned and no longer pink.
  2. Once the beef is browned, stir in 2 tablespoons of chili powder, 1 tablespoon of smoked paprika, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 1 teaspoon of cumin, 1 teaspoon of coriander, and 1/2 teaspoon of cayenne pepper. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, allowing the spices to meld with the beef.
  3. While the beef is cooking, prepare your French fries according to the package instructions. Bake or fry them until they are crispy and golden brown.
  4. Preheat your oven to 400°F (200°C). On a large baking tray, layer the crispy fries first. Evenly distribute the seasoned ground beef over the fries, followed by 2 cups of Mexican cheese. Sprinkle 1/4 cup of cojita cheese on top.
  5. Place the tray in the preheated oven and bake for about 10 minutes, or until the cheese is melted and bubbly.
  6. Once out of the oven, garnish with chopped cilantro and any additional toppings you desire, such as salsa, jalapeños, or sour cream.
