Preparation:
- Start by finely chopping the Castelvetrano olives, Kalamata olives, capers, and fresh parsley. You want these to be small enough to mix well into the turkey but still offer a delightful texture.
- In a large mixing bowl, combine the chopped olives, capers, parsley, olive oil, and lemon juice. Add the ground turkey, egg, dried oregano, smoked paprika, and onion powder. Use your hands to mix everything together gently, being careful not to overwork the turkey.
- Divide the mixture into four equal portions and gently shape them into patties. Make sure they are slightly thicker in the center, as they will plump up while cooking.
- In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, it’s time to add the patties.
- Place the patties in the skillet, ensuring they have enough space between them to cook evenly. Cook for about 5-6 minutes on one side, then carefully flip and cook for another 5-6 minutes on the other side, or until the internal temperature reaches 165°F (74°C).
- Once cooked, remove the burgers from the skillet and let them rest for a couple of minutes. Serve them on your favorite buns or over a bed of greens with your choice of toppings, such as sliced tomatoes, fresh arugula, or a drizzle of tzatziki.

- For a low-carb option, skip the bun and serve the burgers over a salad.
- Try adding feta cheese for an extra layer of flavor.
