Ingredients
  

For the Tuna Salad:
  • 2 cans tuna (5 ounce, solid white albacore in oil)
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon sweet relish
  • 2 teaspoons stone ground or dijon mustard
  • 1 teaspoon mini capers
  • Salt and pepper (to taste)
For the Sandwich:
  • 8 slices marble rye sandwich bread (lightly toasted)
  • Fresh tomato (optional)
  • Lettuce (optional)

Instructions
  1. Step 1: Prepare the Tuna - Open the cans of tuna and drain the oil. Place the tuna in a mixing bowl and flake it with a fork until it’s evenly shredded.
  2. Step 2: Mix the Ingredients - Add the mayonnaise, chopped parsley, sweet relish, stone ground mustard, mini capers, salt, and pepper to the bowl. Stir until all the ingredients are well combined and the tuna is coated in the creamy mixture.
  3. Step 3: Toast the Bread - While the tuna salad is coming together, lightly toast the marble rye bread slices until golden brown.
  4. Step 4: Assemble the Sandwich - Spread the tuna salad mixture on one slice of toasted bread. Add fresh tomato and lettuce if desired, then top with another slice of toast.
  5. Step 5: Serve & Enjoy - Slice the sandwich in half if you prefer and serve it with a side of chips or a fresh salad.
