- Once the lentils are cooked, stir in the Thai green curry paste and ground coriander. Mix well to ensure the lentils are fully coated in the curry paste. Let it simmer for another 5 minutes.
- Pour in the lite coconut milk and add salt to the soup. Stir to combine, allowing the soup to heat through for another 5 minutes. Taste and adjust seasoning as needed.
