Ingredients
  

For the Soup:
  • 2 tablespoons olive oil for sautéing the vegetables
  • 1 medium onion (diced, about 2 cups)
  • 2 cloves garlic (minced, about 2 teaspoons)
  • 4 cups vegetable broth the base of the soup
  • 1 cup French green lentils (rinsed and sorted)
  • 1/4 cup Thai green curry paste for signature flavor
  • 1 tablespoon fresh minced ginger adds a zesty kick
  • 1/2 teaspoon ground coriander enhances the flavor profile
  • 1/2 teaspoon salt for seasoning
  • 1 14-ounce can lite coconut milk for creaminess
  • 1/4 cup cilantro (chopped, for garnish)

Method
 

Cooking Instructions
  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and fresh minced ginger, cooking for an additional minute until fragrant.
  2. Next, add the rinsed French green lentils to the pot. Pour in the vegetable broth and stir well to combine. Bring the mixture to a boil, then reduce the heat to low and allow it to simmer for about 25-30 minutes, or until the lentils are tender.
  3. Once the lentils are cooked, stir in the Thai green curry paste and ground coriander. Mix well to ensure the lentils are fully coated in the curry paste. Let it simmer for another 5 minutes.
  4. Pour in the lite coconut milk and add salt to the soup. Stir to combine, allowing the soup to heat through for another 5 minutes. Taste and adjust seasoning as needed.
