Ingredients
  

  • 1 lb ground turkey
  • 1/3 cup fish sauce
  • 1/3 cup rice vinegar (do not use seasoned vinegar, which contains sugar)
  • 1 tablespoon Asian sesame oil
  • 3/4 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon sweetener (optional)
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 cup shredded carrots
  • 1 cup chopped green onions
  • 1 head butter or romaine lettuce (for wrapping)
  • Fresh cilantro (for garnish)

Method
 

  1. In a large skillet over medium heat, add the ground turkey. Cook it thoroughly, breaking it up with a spoon until it’s no longer pink. This should take about 5-7 minutes.
  2. Once the turkey is cooked, add the minced garlic and ginger. Stir well and cook for another 1-2 minutes until fragrant.
  3. In a bowl, mix together the fish sauce, rice vinegar, Asian sesame oil, red pepper flakes, and sweetener if using. Pour this mixture into the skillet and stir to combine. Allow the turkey to absorb the flavors for about 2-3 minutes.
  4. Stir in the shredded carrots and chopped green onions. Cook for an additional 2-3 minutes until the vegetables are tender but still crisp.
  5. While the turkey mixture is cooking, carefully separate the lettuce leaves. Rinse and dry them gently. You want them to be intact for wrapping.
  6. Spoon the turkey mixture onto each lettuce leaf. Top with fresh cilantro for added flavor and garnish. Serve immediately, and enjoy your healthy and tasty Thai Turkey Lettuce Wraps!
