The BEST Hummus I Have Ever Had!

Ingredients
  

  • 1 cup olive oil
  • 1 cup tahini
  • 2 cans chickpeas (15-ounce)
  • 0.5 lemon Juice of half a lemon
  • 3 cloves garlic
  • 1 cup water
  • 1 teaspoon salt
  • Chopped parsley for garnish
  • Paprika for garnish
  • Red pepper flakes for garnish

Method
 

  1. Begin by rinsing the chickpeas under cold water. This helps remove excess sodium and any canning liquid. Drain well and set aside.
  2. In your food processor, combine the rinsed chickpeas, tahini, olive oil, lemon juice, garlic cloves, water, and salt.
  3. Process the mixture until smooth and creamy. You may need to stop and scrape down the sides of the bowl a few times to ensure everything is mixed well. If the hummus is too thick, feel free to add more water, one tablespoon at a time, until you reach your desired consistency.
  4. Taste your hummus and adjust seasoning as needed. Want a bit more zing? Add another splash of lemon juice or a pinch of salt.
  5. Transfer the hummus to a serving bowl and drizzle with olive oil. Garnish with chopped parsley, a sprinkle of paprika, and a pinch of red pepper flakes for an extra kick.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • For a spicier hummus, add jalapeƱo or cayenne pepper.
  • If using dried chickpeas, soak overnight and cook until tender for a fresher taste.
