  • to taste Salt and pepper to taste, enhancing all the flavors.

Equipment

  • Large Mixing Bowl
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Spoon or spatula

Method

  1. Step 1: Prepare the Chicken. Begin by removing the skin from the rotisserie chicken and shredding the meat into bite-sized pieces. Aim for about 5 cups of chopped chicken to ensure a hearty salad.
  2. Step 2: Chop the Veggies and Fruits. Dice the celery and apple into small, uniform pieces. This will help with even distribution of flavors throughout the salad.
  3. Step 3: Toast the Almonds. In a dry skillet over medium heat, toast the almonds until they are golden and fragrant. This should take about 5 minutes. Stir frequently to avoid burning them.
  4. Step 4: Combine Ingredients. In a large mixing bowl, combine the shredded chicken, chopped celery, diced apple, sweet pickle relish, toasted almonds, and chopped scallions.
  5. Step 5: Make the Dressing. In a separate bowl, whisk together the mayonnaise, Dijon mustard, chopped dill, and a generous pinch of salt and pepper. Taste and adjust the seasoning as needed.
  6. Step 6: Mix Everything Together. Pour the dressing over the chicken and vegetable mixture. Using a spoon or spatula, gently fold everything together until well combined, ensuring all the ingredients are coated evenly.
  7. Step 7: Chill and Serve. Cover the bowl with plastic wrap or transfer the chicken salad to an airtight container. Refrigerate for at least 30 minutes before serving, allowing the flavors to meld together beautifully.

Notes

  • For a different twist, try using walnuts or pecans instead of almonds.
