Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup vegetable oil
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup quick cooking oats
  • 3 cups all-purpose flour
  • 1 cup sweetened shredded coconut
  • 1 cup lightly crushed cornflakes
  • 1 cup chopped pecans or walnuts

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened unsalted butter, granulated sugar, and brown sugar. Cream them together until light and fluffy.
  3. Add the vegetable oil, egg, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and quick cooking oats. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
  5. Gently fold in the sweetened shredded coconut, crushed cornflakes, and chopped pecans or walnuts.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • For extra chewy cookies, refrigerate the dough for 30 minutes before baking.
