Ingredients
  

  • 4 slices Corned beef
  • 2 slices Swiss cheese divided use
  • 1 teaspoon Butter optional
  • 1 unit Egg
  • 1/8 teaspoon Salt
  • 1/8 teaspoon Ground black pepper
  • 1 teaspoon Honey mustard
  • 1 unit English muffin toasted

Method
 

  1. Gather all your ingredients and tools. Ensure your English muffin is toasted to your liking. This will provide a crunchy base for your sandwich.
  2. In a frying pan over medium heat, add the butter if using. Once melted, crack the egg into the pan. Sprinkle with salt and black pepper. Cook until the whites are set but the yolk remains runny, about 3-4 minutes. For a firmer yolk, cook for an additional minute.
  3. While the egg is cooking, use another pan to warm the corned beef slices over low heat. This helps enhance the flavor and ensures it’s heated through.
  4. Spread the honey mustard on the bottom half of the toasted English muffin. Layer two slices of Swiss cheese on top, followed by the warm corned beef. Add the fried egg over the corned beef and top with the remaining Swiss cheese. Finish with the other half of the English muffin.
  5. If you prefer your cheese extra melty, return the sandwich to the frying pan. Cover it for a minute to help the cheese melt slightly.
  6. Slice your sandwich in half if desired, and serve warm. Enjoy the wonderful combination of flavors and textures in every bite!
