Ingredients
  

  • 2 teaspoons olive oil or avocado oil
  • 1 lb lean ground beef
  • 1 tablespoon chili powder
  • 1.5 teaspoons ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon dried oregano
  • 0.25 cup water
  • 12 oz tortilla chips
  • 15 oz black beans, rinsed and drained (or pinto beans or refried beans)
  • 4 cups grated cheddar cheese (or a mix with Monterey Jack)
  • Diced red onion or sliced green onion
  • Shredded lettuce
  • Diced tomatoes
  • Sliced black olives
  • Fresh chopped cilantro leaves
  • Diced avocado or guacamole
  • Sour cream or plain Greek yogurt
  • Jalapeño slices
  • Pickled red onion
  • Salsa

Method
 

  1. In a large skillet, heat the 2 teaspoons of olive oil or avocado oil over medium heat. Add the 1 lb of lean ground beef and cook until browned, breaking it apart with a spatula.
  2. Once the beef is cooked, drain any excess fat. Stir in the 1 tablespoon of chili powder, 1 1/2 teaspoons of ground cumin, 1 teaspoon of kosher salt, 1 teaspoon of smoked paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/4 teaspoon of dried oregano. Pour in 1/4 cup of water and stir well. Cook for another 5 minutes until the mixture is well combined and slightly thickened.
  3. Preheat your oven to 350°F (175°C). On a large baking sheet, spread out the 12 oz bag of tortilla chips in an even layer.
  4. Spoon the seasoned ground beef mixture evenly over the chips. Then, sprinkle the 15 oz of black beans on top of the beef.
  5. Generously sprinkle 4 cups of grated cheddar cheese over the chips, beef, and beans. Ensure that the cheese is distributed evenly for the best melt.
  6. Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the cheese is melted and bubbly.
  7. Once out of the oven, add your fresh toppings: diced red onion or sliced green onion, shredded lettuce, diced tomatoes, sliced black olives, fresh chopped cilantro leaves, diced avocado or guacamole, sour cream or plain Greek yogurt, jalapeño slices, and pickled red onion. Drizzle with salsa to finish.

Notes

  • For a vegetarian option, replace beef with extra beans or tofu.
  • Top your nachos with fresh lime juice for a zesty kick!
  • Store leftover nachos in an airtight container for up to 2 days.
