Ingredients

  • 1/2 cup vegan butter melted
  • 1 teaspoon pure vanilla extract
  • 1/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/3 cup fancy molasses
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 tablespoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • a pinch salt

Method
 

Instructions:
  1. Step 1: Prepare Your Flax Egg - In a small bowl, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water. Stir well and let it sit for about 5-10 minutes until it thickens and becomes gel-like.
  2. Step 2: Preheat the Oven - Preheat your oven to 350°F (175°C).
  3. Step 3: Mix the Wet Ingredients - In a large mixing bowl, combine the melted vegan butter, vanilla extract, brown sugar, granulated sugar, fancy molasses, and the prepared flax egg. Whisk until smooth.
  4. Step 4: Combine the Dry Ingredients - In another bowl, whisk together the flour, baking powder, cinnamon, ginger, cloves, nutmeg, and salt.
  5. Step 5: Combine Wet and Dry Ingredients - Gradually add the dry mixture to the wet ingredients, using a spatula to fold them together.
  6. Step 6: Prepare the Baking Pan - Line your 8x8 inch baking pan with parchment paper, leaving some overhang.
  7. Step 7: Bake - Pour the batter into the prepared baking pan and bake for about 25-30 minutes.
  8. Step 8: Cool and Cut - Let it cool for about 10 minutes, then lift it out and transfer it to a wire rack to cool completely. Cut into squares.
