Ingredients
  

  • 1/2 cup almond butter or 1 cup of whole almonds
  • 1 cup pitted whole dates (scant cup, not packed)
  • 1 each flax/chia egg (1 tablespoon each flax powder and chia seeds mixed with 1 tablespoon of water)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 cup oats (any type)
  • 1/2 cup crushed pecans (or hazelnuts, almonds, walnuts, or a mixture)
  • 1/3 cup raisins

Method
 

  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly.
  2. Step 2: Prepare the Flax/Chia Egg - In a small bowl, combine 1 tablespoon of flax powder and 1 tablespoon of chia seeds with 1 tablespoon of water. Stir well and let it sit for about 5 minutes until it thickens.
  3. Step 3: Blend the Dates - If you are using whole dates, you can chop them finely or pulse them in a food processor until they form a sticky paste.
  4. Step 4: Mix the Wet Ingredients - In a large mixing bowl, combine the almond butter (or whole almonds), blended dates, and the prepared flax/chia egg. Mix until well combined.
  5. Step 5: Add the Dry Ingredients - To the wet mixture, add the cinnamon, baking powder, oats, crushed pecans, and raisins. Stir until everything is evenly distributed.
  6. Step 6: Form the Cookies - Using a spoon or your hands, scoop out portions of the dough and form them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Step 7: Bake - Bake the cookies in the preheated oven for 10-12 minutes, or until they are golden around the edges.
  8. Step 8: Cool and Enjoy - Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
