Ingredients
  

  • 1 small onion finely chopped
  • 4 cloves garlic minced
  • 10 ounces frozen spinach thawed and chopped
  • 6 ounces jarred artichoke hearts quartered
  • 12.3 ounces low-fat silken tofu
  • 1 tablespoon freshly squeezed lemon juice
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoons freshly ground black pepper
  • 1 pinch cayenne pepper

Method
 

  1. Gather all your ingredients. Make sure your frozen spinach is thoroughly thawed and chopped.
  2. In a skillet over medium heat, add a splash of water or vegetable broth. Sauté the finely chopped onion and minced garlic until translucent and fragrant, about 3-4 minutes.
  3. In a blender or food processor, combine the sautéed onion and garlic, thawed spinach, jarred artichoke hearts, silken tofu, lemon juice, kosher salt, black pepper, and cayenne pepper. Blend until smooth and creamy.
  4. Taste the mixture and adjust the seasoning as necessary. You may want to add more lemon juice or spices to suit your preference.
  5. Serve immediately, or transfer to a baking dish and bake at 350°F (175°C) for about 15-20 minutes until heated through.

Notes

  • For a cheesy flavor, add nutritional yeast.
  • Incorporate fresh herbs like dill or parsley for extra flavor.
  • For a smoky twist, add a bit of smoked paprika.
