- Step 1: Prepare Your Equipment - Start by lining a baking sheet with parchment paper. This will be where you pour your toffee mixture to cool. Make sure your equipment is clean and ready to use.
- Step 2: Combine Ingredients - In a heavy-bottomed saucepan, combine the sugar or erythritol, plant-based butter, water, and salt. Stir the mixture together over medium heat until everything is melted and combined.
- Step 3: Cook the Mixture - Continue to cook the mixture while stirring constantly. If you have a candy thermometer, aim for a temperature of around 300°F (hard crack stage). If you don’t have one, you can test by dropping a small amount of the mixture into cold water; it should form hard, brittle threads.
- Step 4: Add Vanilla Extract (Optional) - Once your toffee mixture reaches the desired temperature, remove it from the heat. If you’re using it, stir in the vanilla extract for added flavor.
- Step 5: Pour and Cool - Quickly pour the hot toffee mixture onto the prepared baking sheet, spreading it into an even layer. Allow it to cool for a few minutes.
- Step 6: Add Toppings - If desired, sprinkle the chocolate chips over the warm toffee. Let the chocolate melt slightly, then spread it out evenly. Finally, add your choice of chopped walnuts or pretzels on top for an extra crunch.
- Step 7: Let it Set - Allow the toffee to cool completely at room temperature. Once set, break it into pieces and enjoy your homemade Vegan Toffee!
Notes
- Store the cooled toffee in an airtight container at room temperature for up to two weeks.
- For longer storage, keep the toffee in the refrigerator, where it can last up to a month.
- To prevent sticking, layer pieces of toffee with parchment paper in the container.
