Ingredients
  

For the Stromboli:
  • 2 cups broccoli lightly cooked
  • 1 lb pizza dough about 1 package of raw store-bought
  • 1 tbsp flour for dusting the work surface
  • 2 cups mozzarella cheese shredded (can substitute half with provolone)
  • ½ cup roasted red pepper the marinated kind, diced
  • 1 tsp Italian seasonings dried
  • 1 cup pizza sauce or any marinara sauce
  • ½ cup bell pepper diced
  • ½ cup roasted vegetables like cauliflower
  • 1 cup spinach cooked
  • 2 tbsp butter unsalted, melted
  • 2 cloves garlic minced (or substitute with ½ tsp garlic powder)
  • 1 tbsp basil fresh chopped
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp parmesan cheese freshly grated

Method
 

Directions:
  1. Start by lightly cooking the broccoli. Boil it for about 2 minutes or pan-fry it with a little oil until just tender. Set aside to cool. In the same manner, prepare any other vegetables you want to include, such as bell peppers and spinach.
  2. On a lightly floured surface, roll out the pizza dough into a rectangle. Aim for about ¼ inch thickness. If using store-bought dough, it should come pre-rolled, but you may need to stretch it slightly.
  3. Spread the pizza sauce evenly over the dough, leaving a small border around the edges. Sprinkle the mozzarella cheese generously over the sauce. Then, layer on the cooked broccoli, roasted red peppers, bell peppers, roasted vegetables, and cooked spinach. Add the minced garlic, basil, Italian seasonings, salt, and pepper for added flavor.
  4. Starting from one end, carefully roll the dough tightly around the filling. Pinch the edges to seal the stromboli, ensuring the filling stays inside. Place the rolled stromboli seam-side down on the baking sheet lined with parchment paper.
  5. Preheat your oven to 400°F (200°C). Brush the top of the stromboli with melted butter and sprinkle with freshly grated parmesan cheese. Make a few slits on top of the dough to allow steam to escape. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  6. Once baked, let the stromboli cool for a few minutes before slicing it into pieces. Serve warm with extra pizza sauce on the side for dipping.
