  • small handful fresh baby spinach (optional)
  • 1 slice provolone or cheddar cheese

Instructions
  1. Start by slicing the ciabatta bun or English muffin in half. If using red onion, slice it thinly. Slice or mash the avocado and set aside.
  2. Toast the ciabatta bun or English muffin until golden brown.
  3. In a non-stick skillet, melt the butter over medium heat. Pour in the beaten egg, season with salt and black pepper, and cook undisturbed for about 2-3 minutes.
  4. Spread mayonnaise on the bottom half of the toasted bun. Layer on the avocado, followed by the cooked egg. Top with cheese, spinach, and red onion, then cap with the top half of the bun.
  5. Serve warm, perhaps with a side of fresh fruit or a light salad.
