Ingredients
  

For the Pizza:
  • 1 pound pizza dough store-bought or homemade
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic grated
  • 1 cup whole milk ricotta cheese heaping
  • 1 teaspoon fresh thyme leaves chopped
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon sea salt
  • 4 ounces fresh mozzarella cheese torn
  • 1/4 cup freshly grated Parmesan or pecorino cheese
  • Fresh basil leaves for garnish
  • Red pepper flakes to taste

Method
 

Instructions:
  1. Step 1: Prepare the Dough: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up. Dust a clean surface with cornmeal and stretch out your pizza dough to your desired shape and thickness, aiming for about 12 inches in diameter.
  2. Step 2: Create the Ricotta Base: In a mixing bowl, combine the whole milk ricotta cheese, grated garlic, fresh thyme leaves, lemon zest, and sea salt. Mix until smooth and creamy.
  3. Step 3: Assemble the Pizza: Brush the stretched pizza dough with extra-virgin olive oil. Spread the ricotta mixture over the dough, leaving a small border for the crust. Scatter the torn fresh mozzarella and grated Parmesan or pecorino cheese evenly across the top.
  4. Step 4: Bake to Perfection: Using a pizza peel, carefully transfer your assembled pizza onto the hot pizza stone or baking sheet. Bake for about 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
  5. Step 5: Garnish and Serve: Once out of the oven, let the pizza cool for a minute. Garnish with fresh basil leaves and a sprinkle of red pepper flakes. Slice and enjoy!
