Ingredients
  

  • 1/2 cup whole milk ricotta cheese
  • 2 teaspoons extra virgin olive oil
  • 1 small clove garlic minced
  • 1 tablespoon chopped fresh basil (or 1 teaspoon dried)
  • 2 teaspoons chopped fresh oregano (or 1/2 teaspoon dried)
  • 1/4 teaspoon kosher salt
  • Freshly ground black pepper to taste
  • 1/4 cup shredded Parmesan cheese
  • 8 ounces mozzarella cheese thinly sliced
  • 8 slices white bread (or 6 slices if your bread is larger)
  • 1 large clove garlic peeled and halved (for rubbing on the outsides of the bread)
  • Butter for grilling

Method
 

Preparation Steps
  1. In a mixing bowl, combine the ricotta cheese, extra virgin olive oil, minced garlic, basil, oregano, kosher salt, and a pinch of black pepper. Stir until well combined and creamy. This herb-infused ricotta will be the star of your grilled cheese!
  2. Spread a generous amount of the ricotta mixture on one side of each slice of bread. On four of the slices, layer the mozzarella cheese evenly on top of the ricotta. Sprinkle the shredded Parmesan cheese over the mozzarella, then top with the remaining slices of bread, ricotta side down.
  3. Place your skillet or griddle over medium heat. While it's heating, prepare the outsides of the bread.
  4. Take the halved clove of garlic and rub it generously over the outsides of the sandwich. Then, spread a layer of butter on each side of the bread. This will give your grilled cheese that irresistible golden crust.
  5. Once the skillet is hot, carefully place the sandwiches in the pan. Cook them for about 3-4 minutes on each side, or until they are golden brown and the cheese has melted. You may want to cover the skillet with a lid for a minute or two to help the cheese melt more evenly.
