Ingredients
  

For the Cake:
  • 1 cup granulated white sugar
  • ½ cup packed brown sugar
  • ¼ cup vegetable or canola oil
  • 3 large egg whites
  • ½ cup all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup oat bran
  • teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground allspice or nutmeg
  • 3 cups shredded, unpeeled apples
  • Powdered sugar for dusting (if desired)

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). Grease your baking pan with a bit of oil or line it with parchment paper for easy removal.
  2. Step 2: In a large mixing bowl, combine the granulated white sugar, brown sugar, and vegetable oil. Whisk until the mixture is smooth. Then, add the egg whites one at a time, mixing well after each addition.
  3. Step 3: In another bowl, whisk together the all-purpose flour, whole wheat flour, oat bran, baking soda, ground cinnamon, and ground allspice (or nutmeg).
  4. Step 4: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Step 5: Gently fold in the shredded apples until they’re evenly distributed throughout the batter.
  6. Step 6: Pour the batter into your prepared baking pan and spread it out evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Step 7: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
