Instructions:
- Step 1: Preheat your oven to 350°F (175°C). Grease your baking pan with a bit of oil or line it with parchment paper for easy removal.
- Step 2: In a large mixing bowl, combine the granulated white sugar, brown sugar, and vegetable oil. Whisk until the mixture is smooth. Then, add the egg whites one at a time, mixing well after each addition.
- Step 3: In another bowl, whisk together the all-purpose flour, whole wheat flour, oat bran, baking soda, ground cinnamon, and ground allspice (or nutmeg).
- Step 4: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Step 5: Gently fold in the shredded apples until they’re evenly distributed throughout the batter.
- Step 6: Pour the batter into your prepared baking pan and spread it out evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Step 7: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
