In a small saucepan over medium heat, combine 2 cups of the fresh blueberries, 1/4 cup of granulated sugar, and 1 tablespoon of water. Stir gently until the blueberries begin to release their juices and the sugar dissolves, about 5 minutes. Remove from heat and allow to cool.
In your serving glasses or bowls, start by adding a layer of Greek yogurt at the bottom. Follow this with a layer of the blueberry sauce, and then a layer of cinnamon granola. Repeat the layers until you reach the top of your glass, finishing with a dollop of yogurt and a sprinkle of granola.
Top your parfaits with the remaining 2/3 cup of fresh blueberries for an added burst of freshness. You can also drizzle a little honey or maple syrup on top if you prefer extra sweetness. Serve immediately and enjoy!
