Yogurt Parfaits

Yogurt parfaits are a deliciously layered treat! Fresh blueberries, creamy yogurt, and crunchy granola make for the perfect snack or breakfast.

Ingredients
  

  • 2 2/3 cups fresh blueberries divided
  • 1/4 cup granulated sugar can adjust to taste
  • 1 Tbsp water
  • 2 2/3 cups low-fat plain Greek yogurt
  • 1 cup cinnamon granola store-bought or homemade (break up larger clusters before measuring)

  • Small Saucepan
  • Serving glasses or bowls
  • Spoon or spatula

Method
 

  1. In a small saucepan over medium heat, combine 2 cups of the fresh blueberries, 1/4 cup of granulated sugar, and 1 tablespoon of water. Stir gently until the blueberries begin to release their juices and the sugar dissolves, about 5 minutes. Remove from heat and allow to cool.
  2. In your serving glasses or bowls, start by adding a layer of Greek yogurt at the bottom. Follow this with a layer of the blueberry sauce, and then a layer of cinnamon granola. Repeat the layers until you reach the top of your glass, finishing with a dollop of yogurt and a sprinkle of granola.
  3. Top your parfaits with the remaining 2/3 cup of fresh blueberries for an added burst of freshness. You can also drizzle a little honey or maple syrup on top if you prefer extra sweetness. Serve immediately and enjoy!

Notes

  • For an extra flavor kick, consider adding a pinch of cinnamon or vanilla extract to your yogurt.
  • You can prepare the blueberry sauce in advance and store it in the refrigerator for up to a week.
  • Feel free to mix and match fruits! Strawberries, raspberries, or even bananas work beautifully in this recipe.
